Menu: Carlos’ Italian burger on ciabatta with ground mustard, sharp provolone, spiced grilled onions, marinated tomatoes and arugula.

Ingredients

4 slices of sharp provolone cheese
1 large yellow onion, julienned
4-8 grape or cherry tomatoes, halved
1 cup of fresh arugula
Ground mustard
Extra virgin olive oil
1 tablespoon freshly chopped rosemary
Mix of dash of: ground sage, cracked pepper, cayenne pepper and dried oregano mixed with 2 tablespoons of extra virgin olive oil
2 ciabatta sandwich rolls (defrosted) https://wildforkfoods.com/products/ciabatta-sandwich-rolls/

Directions
Onions: ins small bowl, transfer julienned nouns and mix with the olive oil-spice mixture. Mix well and transfer to a big piece of aluminum foil and seal foil to look like a square.
In a small bowl mix tomatoes with olive oil and chopped rosemary.
Grill burgers on medium heat 5-7 minutes in each side. As soon as burgers are done, place one slice of provolone cheese on each patty. Remove from heat.
Ciabatta: drizzle a little olive oil on the inside of the ciabatta bread and lightly toast (grill) on your grill while the burgers are cooking (place ciabatta on grill no longer than 1 minute).
Serve it up!
On an individual plate, place bottom side of ciabatta bread and lightly drizzle some ground mustard.
Place one burger patty on top of bread and top with a little onion and tomatoes, then place second patty, drizzle a little ground mustard, add some more onions and tomatoes.
Finally, place a generous amount of arugula topped with the top of the ciabatta bread.
Garnish with potato chips.
